Using St.Brigid's' Unsalted 84% M.F Organic Grass-Fed A2 Jersey Butter we follow the traditional ghee cooking method that simmers off the water content and caramelizes the milk solids. The caramelized milk solids are removed but leave behind a rich caramelized aroma and flavour.

The deep yellow colour of butter from St. Brigid's Creamery carries over into the deeper golden yellow of our collaboration grass-fed organic ghee. This colour is a visual indication of the high concentration of beta carotene that comes from the grass rich diet of St.Brigid's herd.

WHY WE LOVE ST. BRIGID'S CREAMERY

St.Brigid's is a family farm located near Brussels, in Huron County, Ontario's West Coast. Their single herd of A2 Grass-Fed Jerseys graze organic certified pastures and silvo pastures that supply the cream used to barrel-churn their world-class 84% fat Jersey butter.

We sought out St. Brigid's to supply Canadian grass-fed organic butter for OG Ghee and have been patiently waiting for their butter to be available to us to create these jars. Their farming practices that support the community, the environment, and animal welfare are the reason we are excited to finally partner with them.

What is the significance of A2?

A2 means it's made with cream from cows that only have the A2/A2 beta casein protein in their milk, which is found to be easier to digest among individuals who have issues digesting A1 beta casein, generally found in Canadian pooled dairy.

What is the nutritional difference between grass-fed dairy and conventional dairy?

Grass-fed dairy contains higher levels of conjugated linoleic acid (CLA), more omega-3 fatty acids, and a preferable omega-6 to omega-3 ratio. It can also contain higher levels of fat-soluble nutrients like vitamin K2 and beta-carotene, which contribute to the naturally rich yellow colour of grass-fed butter.

Does grass-fed dairy taste different?

Grass-fed dairy reflects the cows pasture-based diet, which means that flavour can subtly shift with the seasons depending on the grasses and forage available. This gives grass-fed butter and ghee a more dynamic, terroir-driven flavour profile.
