Wings & Corn "Ribs"

Ghee and ribs

This delicious, yet simple recipe comes to us courtesy of Teddy Cosco, and the awesome outdoors-based culinary team at @castandiron. (video below)

Mise en Place:

  • Corn on the cob - 4 
  • OG Ghee - 3 tbsp 
  • Salt to taste
  • Chicken wings - 2 pounds
  • OG Ghee -  3 tbsp
  • Buffalo sauce (we used Frank's Red Hot)
  • Seasoning salt to taste

Method: 

For Corn Ribs

  1. Cut the corn into quarters lengthwise, creating "corn ribs." Use a sharp knife! 
  2. Preheat your grill or BBQ to medium-high heat.
  3. BBQ the corn ribs until they are cooked and have black spots, typically around 10-15 minutes, turning occasionally to ensure even cooking.
  4. While the corn is grilling, melt the OG Ghee in a microwave-safe container or on the stovetop until it becomes a liquid.
  5. While the corn is still hot, toss it in the melted OG Ghee to coat it evenly.
  6. Season and serve

For Buffalo Wings:

  1. Season the chicken wings to taste with seasoning salt. Make sure each wing is well coated.
  2. Preheat your grill or BBQ to medium-high heat.
  3. BBQ the seasoned wings on both sides until they are fully cooked, with crispy and golden-brown skin. This typically takes about 15-20 minutes, turning the wings occasionally for even cooking.
  4. While the wings are cooking, melt the OG Ghee either in a microwave-safe container or on the stovetop until it becomes a liquid.
  5. In a separate bowl, mix the melted OG Ghee with Buffalo sauce to your desired level of spiciness. You can adjust the ratio of sauce to OG Ghee based on your preference.
  6. Once the wings are cooked and have a nice char, remove them from the grill.
  7. While the wings are still hot, toss them in the OG Ghee and Buffalo sauce mixture, ensuring that they are thoroughly coated with the flavorful sauce.

Serve your Corn Ribs and Buffalo Wings immediately, garnishing with extra sauce if desired.
