Method

STEP 1:
Peel and chop the apples.

STEP 2:
Heat OG Ghee in a pot.

STEP 3:
Add the chopped apples, sprinkle with cinnamon and white sugar, and stir together.

STEP 4:
Cook until tender, then remove from heat.

STEP 5:
In a large bowl (or using a stand mixer with a dough hook), pour in the milk and sprinkle with the yeast. Allow it to sit until it gets foamy.

STEP 6:
Add flour along with the sugar, eggs, softened OG Ghee, and salt. Stir until you have a sticky dough.

STEP 7:
Gradually add more flour and knead until the dough becomes smooth and elastic, though it should still be tacky. The flour will absorb some liquid as it rests.

STEP 8:
Cover the dough and let it rise for about an hour and a half, or until it doubles in size.

STEP 9:
Roll or pat the dough out to about 1/2-inch thickness and cut into 2-inch rounds.

STEP 10:
Once the dough has risen and the filling has cooled, roll out the dough to about 1/4 inch thick.Sprinkle the cooked apple filling evenly over the entire surface of the dough.Roll the dough, pinching the seam together, and tucking apples inside as much as possible.

STEP 11:
Heat about two inches of oil in a heavy, shallow pot or Dutch oven over medium-high heat. The oil should be hot but not smoking; it should sizzle when a scrap of bread or dough is dipped in. If you have a thermometer, it should read about 350°F.

STEP 12:
Cook the doughnuts in batches, without crowding the pot. Turn them with a slotted spoon or tongs for 2-3 minutes or until they turn deep golden.Transfer the cooked fritters to a paper towel-lined plate.

STEP 13:
Mix icing sugar and water until you reach the desired consistency (not too runny and not too thick).

STEP 14:
Dip each fritter into the prepared glaze.
