Gingerbread Chai Fudge

Mise en Place:

  • Chai Spiced Ghee - 1/4 cup
  • Condensed Milk - 1 cup
  • Dark Brown Sugar - 2/3 cup
  • Molasses - 1/4 cup
  • Orange Pekoe Tea Bag - 1
  • Cinnamon - 1/2 teaspoon
  • Ground Ginger - 1/2 teaspoon
  • Nutmeg - 1/8 teaspoon
  • Cloves - 1/8 teaspoon
  • Allspice - 1/8 teaspoon
  • White Pepper - 1/8 teaspoon
  • Flaked Sea Salt - 1/8 teaspoon, plus extra for topping
  • White Chocolate - 150 grams
  • Christmas Sprinkles - for topping

Method: 

  1. Begin by combining the condensed milk, dark brown sugar, molasses, and chai spiced ghee in a saucepan. Stir the ingredients together well.
  2. Place the saucepan over high heat. As the mixture warms, give it another good stir, then add the orange pekoe tea bag.
  3. Once the mixture starts boiling, reduce the heat to medium-low. Let it cook for 4-6 minutes, or until it thickens slightly. It's important to stir frequently during this process to prevent burning.
  4. After the cooking time, carefully remove the tea bag from the saucepan. Then, take the saucepan off the heat.
  5. Now, add the cinnamon, ground ginger, nutmeg, cloves, allspice, white pepper, and flaked sea salt to the mixture. Follow this by adding the white chocolate.
  6. Stir the mixture well until the chocolate is completely melted and the spices are evenly distributed.
  7. Carefully transfer the fudge mixture to an 8 x 8 cake pan lined with parchment paper. Be cautious, as the mixture will be very hot.
  8. Use a spatula to spread the fudge evenly in the pan. Once it's spread out, sprinkle the top with Christmas sprinkles and a bit more flaked sea salt for garnish.
  9. Place the pan in the refrigerator and let the fudge cool and set for a minimum of 2 hours.
  10. Once the fudge is set, remove it from the fridge and cut it into squares. Your festive, spiced fudge is now ready to be enjoyed!

Pour the mixture into a mug and top with marshmallows as an optional garnish.
